A balanced diet without chocolate is a bad idea. The only way to counter a bad idea is with a better idea. Chocolate + peanut butter is a great idea.

Think about it. Between them, they cover four of the five food groups.

Chocolate itself is a food group. It also encompasses two other food groups - vegetables and good fats. :horn:

Chocolate is derived from cocoa beans. Beans = vegetable.

Sugar is derived from either sugar CANE or sugar BEETS. Both are plants, which places them in the vegetable category. Thus, chocolate is a vegetable. Source.

If it’s milk chocolate, it has protein as well. That leaves out grains, which these cupcakes have plenty of.

Then there’s the frosting - which is literally the icing on the cake. Peanut butter is chockful of protein (and good fats). And peanuts are legumes, which are also veggies.

A piddly little cupcake that’s so good for you, it ought to be illegal.

These cupcakes were inspired by The Best Cooker’s Vegan Chocolate Cake.

Huh?? What the heck is ‘too chocolatey’? Is there such a thing? :rolleyes:

We didn’t want anyone to accuse our cupcakes of not being too chocolatey. :nono: So we added some dark choc … antioxidant veggies to the recipe. :cool:

And reduced the oil and suga… cane fruit. :angel: And added the pean… legume frosting. What’s a cupcake without frosting?

We used organic store-bought peanut butter - just two ingredients: peanuts and salt. Avoid the brands that have other ingredients like partially hydrogenated oils. Or make your own.

Blend 1 cup chopped peanuts to a smooth paste with 1.5 tablespoons oil and a pinch of salt.

We, who are not big fans of frosting, liked this salty-sweet variation. A great way to have your veggies and eat them too. :) Sashtang namaskar, dear Cookerji.

Vegan Antioxidant Veggie and Legume Cupcakes

(Makes 15 medium cupcakes)

Preheat oven to 375 F.

Mix together and set aide
1.5 cups wholewheat pastry flour (or all purpose flour)
2/3 cup raw cane sugar (or more)
1/3 cup cocoa powder
1/4 tsp salt
1/2 tsp baking sod
a

Mix together
3 ounces chopped dark chocolate
1/4 cup oil
1/4 cup unsweetened applesauce
**or mashed banana or more oil
1 tsp instant coffee granules plus 2/3 cup hot water
(or 2/3 cup hot coffee)
1 tbsp coffee liqueur (optional)
1 tsp pure vanilla extract

until the chocolate melts and the coffee granules are dissolved.

Add wet mix to dry and fold gently.

In the end, add
2 tbsp white or apple cider vinegar

the batter will turn foamy. Mix gently without deflating too much, and pour into muffin cups (we got 15 muffins), or into a greased cake pan lined with parchment.

For muffins, bake for around 15 minutes, for a cake 25-30 minutes. Test with a toothpick to see if it comes out clean.

Legume Frosting:

3 ounces chopped dark chocolate
1/2 cup organic peanut butter
2 tablespoons raw cane sugar (or more)
2 tsps coffee liqueur (optional)
1/4 cup hot soymilk or water

Mix everything together until blended to a smooth paste. If it is runny, refrigerate until it thickens a bit.

Cool the cupcakes and frost.

I grew up in the midst of sugarcane, and I still can’t say that I know what may be the cane FRUIT, but I am willing to accept your word in the interests of chocolate nutrition and these yummy cakes.

Now i can eat whole cup cake that too chocolate ..and that too with chocolate frosting ….and that too without even thinking about it next day in gym.. ;)
by the way i tried out the whole wheat bagels…..it turned out very well except it got burned a little bit :( …i should have checked them often …..i really admire the way u have shaped the bagels …like u said “it really needs practice”..it hell needs some kind of work…. :)

I think I should print this post and frame it in the kitchen. Coz every time I make something with chocolate I will not have a little tiny guilty feeling nagging at the back of my head. Those cupcakes look good enough to dive into!

These are great. Love chocolate and peanut butter (make my own). Never knew chocolate and peanut butter were vegetables, but one learns something new everyday!:D

A few weeks back Food TV had a chocolate week or something, my frnd and I watched two episodes and were craving something chocolate asap and so made a batch of chocolate chip cookies at 10 in the night :embarrass (it was a week day by the way ;;) )
