My Birthday Brunch: Aate ka Sheera

Pronounced aah-tay kah shee-rah. Also called Aate ka halwa. In Hindi, aata = wheat flour, sheera = pudding.

As a certified wheat addict, I had to bookmark this recipe when I saw it. This is Manasvi’s grandmother’s recipe from Rajasthan. It’s simple, flexible and takes about ten minutes to put together.

This can be easily veganised by substituting the ghee (clarified butter) with transfat-free margarine. If using regular butter, cook it for three or four minutes until it loses some of the water content and gets a nutty aroma.

WHEAT AND ALMOND PUDDING (AATE KA SHEERA)

Serves 3 to 4.

1 cup whole wheat flour
**either the fine-ground chapati flour/aata or regular whole wheat flour will work for this
1/4 cup whole almonds or store-bought slivered almonds
1 cup sugar (I used 2/3 cup raw cane sugar)
1/2 cup ghee (clarified butter) (I used 1/4 cup)
hot water - 2 cups
a few drops rose water (my addition)

(Pssttt …. I added a couple more things, but since I’m sending it to Nupur’s Less is More event where one has to stick to five ingredients or less (water doesn’t count), I’m not telling.)

Heat the ghee, add the flour, stir until kinda roasted and aromatic.

If using whole almonds, soak them for a couple of hours, skin them, pat them dry and grind them to a coarse powder. Too much work. I just ground pre-skinned slivered almonds in my spice grinder.

Add the almond powder to the wheat and ghee mixture and cook the whole thing for five more minutes until it is rich brown. The deeper the colour, the better the flavour.

Heat 2 cups water in a kettle or in the microwave. Add it to the mixture and stir until the water is absorbed. You may need 1/4 cup more water depending on the grind of the flour you’re using.

Add the sugar and the rose water (You can substitute the rose water with green cardamom or saffron). Cook for a minute or two until the sugar melts.

Take it off the stove, take a picture, dig in while it’s still hot.
