Menu Plan Week of June 16th

Last week’s menu was a total bust. I think I only made two of the five meals I planned. I just didn’t have time to cook anything during the move. If I had been smart I would have purchased some prepackaged meals from the store, but I didn’t, so we ended up eating fast food many nights of the week. This week I will not be so ambitious. Although we are out of the other house, we have a lot of work to do on the new house. Meals will be simple, and involve minimal prep time.

Breakfastsâ€â€Waffles, pancakes, cereal, French toast

Lunchâ€â€Sandwiches, muffins, smoothies, cut up fruit and veggies

Dinner

Monday-Left Overs

Tuesday- Frozen Lasagna, this was a huge hit last week, so I will buy it again. It is easy and much cheaper than going out to dinner.

Wednesday- Breakfast for dinner, waffles, eggs, and fruit.

Thursday-Pasta, either spaghetti or alfredo, I can’t decide.

Friday- Pizza, hopefully homemade, but I am not making any promises!

Hopefully by next week I will be settled in the house and able to get back to our healthier eating. I was able to purchase grain in bulk at the homeschool convention so I hope to start baking bread again soon.

Homemade pizza has become one of our favorites. Moving is never fun. We moved last October and still have stuff that is in boxes. Guess we just need to toss them if we haven’t used it in all this time.

Funny – last week was a bust at our house too due to CRAZY scheduling issues. A friend asked me how my Tuna Casserole turned out and I told her “It’s funny – it tasted just like a McDonald’s Qtr Pounder w/cheese – weird huh?” Looks like we’ll both be back on track this week – good luck!

We’ve tried your pink pasta and chicken tetrazzini this week…my daughter says that Miss Toni makes “real restaurant food!” (BIG compliment…she can cook, and she is fussy!)

I vote alfredo on Thursday, since it’s pretty cool out. The creamier sauce is nicer on cool days. (There is a reason cream sauces aren’t popular in steamy southern Italy!)
