Kitchen Tip Tuesday Mini Muffins

My family loves muffins. I make them with fresh ground wheat flour and usually am able to add lots of healthy stuff without the kids noticing. Since the regular sized muffins were too big for my littlest kids, and we were wasting parts of muffins, I started making mini muffins. They are a hit will all my kids and now they prefer them to the bigger muffins. One thing I didn’t like about the minis was that it was a pain to scoop them into the muffin tin. One day I discovered that a cookie scoop is just the right size for a mini muffin. Just fill up the scoop and click right into the muffin tin. Filling the tins is a breeze and the kids can do it by themselves without over or under filling the tin.

For all who have asked about the muffin liners. I purchase mine at JoAnn’s and Michaels. I have also bought them in bulk through a food co-op. Target and Walmart sells them seasonally, if you wait until after the holiday they are usually half price or seventy-five percent off.

Yum…your muffins look so good! Great tip to use your cookie scoop to fill the muffin tin. SO much easier…and less messy!

I love muffins and I use the scoop to make cookies as well. If I need less dough per cookie, I just scoop a little less. Works great!

I bought lots of boxes of frozen brie in pastry for a party. I opened a package the other day just for a snack in the evening with a glass of wine. They were in a cute little muffin-like pan and it said I could put it in my oven! Go figure! Well I did and they turned out great (and very tasty). Then I thought to myself, “Self, if this cute little pan didn’t melt in the oven I bet you can wash it and save it for when the grandkids come and you can make cute little muffins.” So I did… now I’m waiting for the grandkids, or maybe I’ll make some bran muffins for me!

I’ve also found the mini paper liners in the wedding section of walmart.

Thanks for the tip about the liners. I have been looking for them since my regular grocery store clearanced them out.
