Menu Plan Week of August 18th

Our last week before school begins! This week I am focusing on eating from the pantry since I would like to organize it a little more before next week.

Monday

Breakfast-Waffles

Lunch- Sandwiches / Fruit

Dinner- Stir Fry (recipe below)

Tuesday

Breakfast- Cereal/ Oatmeal

Lunch-Smoothies, Cheese, Crackers

Dinner- Lasagna, Cesar Salad, Texas Toast

Wednesday

Breakfast- Pancakes

Lunch- Sandwiches/ Fruit

Dinner- Bee Rocks ( I will post this new and improved recipe later this week)

Thursday

Breakfast- French Toast

Lunch- Muffins / Fruit Smoothies, Cheese, Crackers

Dinner- Mexican Skillet (recipe below)

Friday

Breakfast- Cereal/ Oatmeal

Lunch-Visiting Friends

Dinner- Crockpot Sloppy Joes/ Hotdogs (recipe below), fruit and veggies

Easy Stir Fry

Ingredients

1 tablespoon olive oil 2 tablespoons mince garlic Vegetables of your choosing, we use celery (2 stalks chopped) squash (sliced or shredded) green beens yellow pepper (sliced) shredded or chopped carrots 2 cups shredded cabbage 1 cooked and chopped chicken breast (optional) Japanese Style Chow Mein noodles Soy Sauce Adobo seasoning

Coat frying pan with olive oil. On medium heat saute’ garlic and onions. After 2 to 3 minutes add green beans, celery, pepper and squash. In 2 to 3 more minutes add carrots and chicken. Add enough soy sauce that all the vegetables are coated with sauce. Add cabbage and cook another 2 to 4 minutes. Sprinkle with Adobo seasoning. Add noodles last and cook until heated. Serve immediately.

These are the noodles I use for the stir fry. This is a great way to use up extra veggies in your fridge.

Mexican Skillet

Ingredients

1/2 cup chopped onions 1 TBS olive oil 1 TBS minced garlic Chicken Breast (chopped) 1 can corn (drained) 1 can black beans (drained) Cooked rice (when making your rice decrease the amount of water by about 1/2 cup and add 1 cup of salsa)

Coat large frying pan with olive oil. Saute onions and garlic. Add chicken, beans and corn. When everything has been heated through add the cooked rice. Serve immediately. This meal was super easy and everyone loved it. We topped it with sour cream, but I think it would also taste great with shredded jack cheese on a tortilla. Although what doesn’t taste great with cheese! I used white rice, but plan on using brown rice the next time I make this recipe.

Crockpot Sloppy Joes

Ingredients

1 pound ground beef 1/4 cup chopped onion 1/2 teaspoon garlic powder 1 teaspoon prepared yellow mustard 3/4 cup ketchup 1 tablespoon brown sugar 1 teaspoon salt ground black pepper to taste

Brown ground beef. Add ground beef and remaining ingredients to crockpot. Cook on low for 4 to 6 hours.

Mmmmm. We love sloppy joes here. Your recipes look great… and I love those weeks when everything’s in the pantry.

yummy!! Those crockpot sloppy joes are basically the same except I use a can tomato soup instead of ketchup!
